Jacky Rigaux, ardent advocate of terroirs, returns to a study of the « climates » of Burgundy, which he defines as « carefully demarcated vineyard parcels each capable of producing a wine with a distinct personality ». Aubert de Villaine, for whom a « climate » represents « an alchemy between a place, nature, people and centuries », makes a precious contribution to this work. The text is studded with wise words from winegrowers, all of them concurring with the opinion expressed by Dominique Lafon : « It is important to ask oneself if the liquid in the glass matches the place from where the wine comes. »
